The Greene King Brewing Quality Team

Meet the brewing team dedicated to every aspect of cask beer quality control, from the brewery at Bury St Edmunds right to your glass.

They are a highly qualified bunch who really know their real beer. Working alongside John Bexon, to keep an expert eye on the brewing process, they make sure our cask ale reaches the customer in pristine condition. No matter what their specific role in the brewing process, each is committed to delivering a great tasting pint of real ale.

Master taster - Susan Chisholm

Susan Chisholm

Susan Chisholm is Greene King's guardian of taste. Beer lovers around the country depend on her and her team to maintain the exceptional quality of their favourite pint.

Susan has worked at Greene King for 30 years and makes sure that the quality of every pint passes rigorous taste assessment. This starts at the brew house with the 'raw' beer before it starts to ferment and ends with sensory taste-testing before it leaves the brewery. Susan gathers a taste team from across the company to check the consistency of colour, flavour and aroma of the beer before it heads out of the brewery to be savoured by millions of beer fans.

Dawn loves her beer and it's her enthusiasm for our national drink that makes her such a natural beer quality tester. Never straying too far from a microscope, Dawn is responsible for assessing the quality of Greene King's brewing output everyday to ensure it meets stringent standards.

As Greene King quality manager, Richard is the brewery gatekeeper, making sure that every step of the brewing process meets the highest standard before the beer passes through the brewery gates and out to pub-goers across the nation. A qualified brewer, Richard monitors every aspect of the quality control process, from the team in the laboratory to the implementation of on-site training to all those involved in the creation of Greene King beer.

Richard's job doesn't just stop at the brewery gates. As cask beer undergoes secondary fermentation in pubs before being served, Richard conducts audits of pub and licensees to encourage quality management in cellars up and down the country. He also runs education and training programmes for new and existing licensees, to make sure that every pint of Greene King beer is as good as it can possibly be.

Chris, Roger and Mike are integral members of the quality team. They are involved in many technical elements of the business, from dealing with quality issues around the brewery, through to teaching publicans and tenants about the brewing process, how to prepare cask ales and everything people need to know about running a pub.

David Carr and Trevor Huggins

Ever wondered how cask beer is always served at the perfect temperature, how the perfect pint is poured and how it tastes fresh with a clean finish? David Carr and Trevor Huggins are there to ensure that every Greene King pint is stored correctly and served perfectly every time.

Trevor Huggins runs licensee training, ensuring that each Greene King pint carries the stamp of quality. This includes everything from explaining the mechanics of the pumps, providing guidance on cleaning the lines, advising on health and safety issues and revealing the secrets behind pulling the perfect pint. Trevor also helped create the fast pouring system that has been introduced at the Roundhouse in London, enabling the perfect pint to be poured within ten seconds.

As Head of engineering and technical services, David's job is to manage a dedicated team overseeing the installation and maintenance of all beer technology in pubs across the country. From overseeing the implementation of Greene King's pioneering Cask Revolution beer engine to advice on cellar upkeep and technical issues, David plays a vital part in ensuring that the quality of Greene King's beer never falters.
